Ingredients:

 2 courgettes
1/2 an aubergine
1 large carrot
1/2 an onion
1 egg
120ml of water
115g of flour
Salt and pepper
Oil for deep frying
Tempura vegetables
 

Method:

1. Peel the courgettes, aubergines and carrots.
Cut into strips. Place into a bowl and sprinkle
with salt and leave for 30 minutes. Rince under
cold water and dry well.
2. Cut the onion into slices. Mix all vegetables in
a bowl and season with salt and pepper. 
3. For thr batter: Mix water, the egg and flour together.
Mix till you have a creamy consistence.
4. Dip the vegetables into the batter. Half fill a wok
with oil, deep fry for around 3 minutes until golden
brown and crispy.
 
Serving Suggestions: Soya sauce or sweet chilli sauce
for dipping.
